– Late harvests or with Botrytis can produce great liquor wines.
– Aging is not easy, unless you keep the wine in the barrel for a long time.
The sauvignon blanc grape gives very nervous and aromatic wines, of medium alcohol and high acidity. Consumed young, the wines are fresh, dry and very aromatic, with little ripe fruit and herbaceous nuances.
They can age in oak barrels, being more complex wines with limestone, stony and smoke aromas.
